Amelia and I had the pleasure of meeting Kristie at a Humane League Gala here in Denver, and also at her book signing at the Tattered Cover. Her mission in life and with the Humane Society is to help people transition to a “meatless” diet.

If you’re concerned about your oil and salt intake, you can reduce the vegan butter by half and eliminate the salt. We made it both ways and it was delicious both ways.

Instructions
  1. Preheat oven to 350 degrees. Put the margarine in a large casserole dish and stick it in the oven to melt while the oven preheats.
  2. In a medium bowl, mix the flour, baking powder, salt, and sugar. Add the almond milk and mix together with a whisk.
  3. Carefully remove the casserole dish from the oven and pour the batter over the melted margarine. Pour the fruit over the mixture.
  4. Bake for 1 hour until the top is golden brown the the crust has risen over the fruit.
