Cauliflower Potato Soup

Cauliflower Potato Soup PinWe created this delicious Cauliflower Potato Soup with a beautiful head of cauliflower we got at the market. It looked so pretty we hated to cut it up!

We spent most of New Year’s Day 2018 in the kitchen experimenting with new recipes and this was one of them. We also made Ginger Vinaigrette Beets, a Spinach Salad and a failed attempt at Sweet Potato Pie.

Cauliflower is a cruciferous vegetable in the same family as broccoli and Brussel Sprouts. That means it’s one of the best vegetables you can eat. And with only 156 calories, this filling soup is also great for your weight loss goals.

It pairs well with a Hearty Side Salad or Spinach Salad.

Instructions
  1. Chop the onion and garlic. We also like to premeasure our seasonings.

  2. Peel and dice the potatoes.
  3. Chop the cauliflower into small florets. Save a 1/4 cup for garnish is desired.
  4. Bring 1/4 cup of veggie broth to a simmer in a large pot.
  5. Add the onion and garlic to the pot. Stir and steam fry covered until tender, about 2 minutes.
  6. Add the remaining ingredients excluding the 8 cups of veggie broth. Stir to combine. Cover and steam fry for 5 minutes to slightly soften and bring out the flavors.

  7. Add the 8 cups of veggie broth and stir to combine. Bring to a boil and reduce to simmer. Partially cover.

  8. Cook until the cauliflower and potatoes are very soft, about 45 minutes to an hour.

  9. With an immersion blender, hand mixer or food processor, blend until smooth.

  10. Serve garnished with small cauliflower florets.
