Peanut Butter Hummus PinThis Peanut Butter Hummus recipe was inspired by a freak weather event in Atlanta. Amelia had travelled back to Denver for her day job and on the day of her return flight to Atlanta, we had 8 inches of snow, which cancelled hundreds of flights.

She was able to fly back the next evening, but the roads were slushy from all the melting snow and the temperatures were predicted to drop below freezing after sunset. Since her flight wasn’t scheduled to arrive until 8PM, we decided to get a hotel room near the airport so we wouldn’t have to drive back to Marietta on icy roads.

Amelia has tons of Marriott points from her years of travelling for sales, so we reserved a room at the Renaissance Hotel. It’s still not easy to eat vegan at hotels (or on airplanes), but they did have a few options for us.

One of them was a version of hummus made from a local culinary favorite: boiled peanuts. We had never heard of boiled peanuts before our stay in Atlanta, but it’s a popular appetizer on area restaurant menus. We ordered some at a restaurant with some friends and Amelia loved them, but I didn’t like them. They were too messy for me. I’d rather eat them as nature (and ballparks) intended…out of the unboiled shell.

Or in delicious hummus! Rather than go through the hassle of boiling peanuts and deshelling them to match the Renaissance Hotel’s Boiled Peanut Hummus, we decided take the easy route by using peanut butter.

Basically, we used our Classic Vegan Hummus recipe and swapped out the tahini with peanut butter, and it’s absolutely delicious! It goes really well with pita chips, apples, celery or your favorite hummus delivery device.

Beet Hummus

Beet Hummus PinThis deliciously pink Beet Hummus is not only nutritionally dense, it tastes amazing! You won’t be able to stop eating it!

Amelia and I took a plant based cooking class offered by a very talented local chef, Kelley Williamson. She’s known as the Plant Based Kitchenista and her version of this tasty Beet Hummus was there for us to eat as we cooked.

This recipe is Amelia’s version of Kelley’s recipe with a few changes. Amelia wanted to make more, so she doubled the ingredients for everything except the garbanzo beans. That made the hummus a little more moist like the texture of traditional hummus making it easier to dip our crackers and pita chips in it.

We absolutely love this Beet Hummus recipe. The beets give it a little bit of sweetness while the lemon and tahini give it some zest. You might also want to make your own Homemade Pita Chips to go with this delicious hummus.

Lentil Hummus with Roasted Garlic

Lentil HummusThis lentil hummus has a milder taste than our classic Vegan Hummus so it goes better with pita chips or pretzel thins than carrots or peppers. Veggies with stronger flavors may overpower this delicate hummus recipe, but it’s still delicious and a great use for your extra lentils.

Lentils are very nutritious. They’re loaded with potassium, calcium, zinc, niacin and vitamin K, dietary fiber, lean protein, folate and iron.

We made this recipe with the most common of the lentils, brown lentils, but you can use any color you have on hand. Each type of lentil has a slightly different taste, bringing more variety to your lentil hummus experiences.

Hummus Veggie Wrap

Hummus Veggie WrapThis Hummus Veggie Wrap is a quick and easy lunch that you can make ahead of time and it pack for work or school, topping your veggies with hummus in a sealable container. This recipe is both filling and packed with nutrients. It has 15 grams of fiber, 13 grams of protein, 261% RDV of Vitamin C and 180% of Vitamin A.

We’ve included this as a weight loss recipe since it has so many healthy nutrients and nothing that can be considered bad. However, you can reduce the calories and processed carbs by eliminating the wrap and preparing it in a bowl. It’s delicious and nutritious either way.

It even works well as a condiment for your veggie burgers and sandwiches.

Classic hummus is made with chickpeas (aka garbanzo beans), which are packed with protein and fiber. One serving of this recipe has 9 grams of protein and 9 grams of fiber. When you pair it with raw veggies, you’ll not only get tons of healthy nutrients, you’ll also feel fuller from all of that fiber.

In fact, hummus is very high calorie so you might want to skip it until you’ve reached your weight loss goals. This recipe has over 200 calories per serving including the veggies used for dipping.

This vegan hummus recipe is super easy and very tasty, but you will need a food processor.
