Vegan SnickerdoodlesWhen I was a kid, mom often made snickerdoodles for our family during the holiday season and I particularly enjoyed the cinnamon-y taste and soft texture when they were fresh from the oven. These vegan snickerdoodles are just as good as mom’s, but without the butter and eggs.

If you have a holiday party, work party, church gathering, family or friends visiting…you can easily pass these vegan snickerdoodles off as non-vegan and no one will be the wiser. They have crispy edges with soft centers ensuring these cinnamon sugar cookies will be a big hit with everyone.

These snickerdoodles are so good, I just power right through my cinnamon allergy and eat them anyway. Luckily for me, they only cause the inside of my cheeks to swell up, but it goes away after a few hours. Totally worth it!

We use Earth Balance Organic Vegan Butter, but you’ll need to use the Earth Balance Soy Free variety to make these vegan snickerdoodles soy free.

If gluten isn’t an issue for you, you can probably use regular flour, but that’s not how we made it so we can’t attest to how it’ll turn out.

Using top-notch ingredients is important for any recipe, but none more-so than when baking. You can literally taste and see the difference so spend the extra money and buy high-quality, organic ingredients for your baking recipes. Especially if you’re going to feed them to non-vegans.

Vegan Pancakes

Vegan PancakesThis Vegan Pancakes recipe tastes like it has dairy and eggs, but doesn’t. The pancakes are light and fluffy, and fast and easy to make. This is another recipe that falls into the category of “if you don’t tell them, they won’t know it’s vegan.”

We like to cook our pancakes on an electric griddle so they cook more evenly and we can cook several of them at one time. But you can cook them in a large skillet or square pancake griddle on the stove, too. It just takes longer. That’s how my mom has always done it.

Enjoy topped with organic maple syrup or your favorite fruit preserves. Goes great with Veggie Sausage. Makes about 24 – 3″ diameter pancakes.

Vegan Chocolate Chip Cookies

Vegan Chocolate Chip Cookies PinIf you serve these Vegan Chocolate Chip Cookies to people and don’t tell them they were made without butter, eggs or milk, they won’t know. These may be the best chocolate chip cookies I’ve ever eaten!

I like mine soft and chewy…Amelia likes her’s crispier. We both get what we want with this recipe by cooking mine for less time and hers a little longer. The only bad thing about these cookies is that I can’t stop eating them. They barely last a day!

The really nice thing about these vegan chocolate chip cookies is they don’t have that greasy coating or aftertaste that you get from using butter and milk. They’re simply delicious!

Note: Oil is not a healthy food and coconut oil is probably the worst. If you are trying to lose weight, lower your cholesterol or reverse diabetes, please do not eat these cookies. They’re meant for a rare treat or to show non-vegans how delicious vegan food can be.
