Sweet Potato Black Bean Enchiladas

These Vegan Sweet Potato Black Bean Enchiladas are so deliciously amazing we can’t get enough of them! They’re sweet, spicy, savory and oh so flavorful!

If you’ve ever cooked your own enchiladas, especially without deep frying the tortillas in oil, you’ll be able to sympathize with us on how challenging it is to get them to look pretty. We had to cook this recipe 3 times to not only perfect the ingredients, but to get the pictures to come out well enough to post on our website.

But it was SOOOO worth it!

The trick was to steam the tortillas in a steamer pot for about 1o to 15 seconds before assembling them. Kind of like how they do it at Chipotle. That made the tortillas very soft and pliable. We also used Mi Rancho Organic Corn Tortillas with Guar Gum, which also helped hold them together through the steaming and assembly process.

We actually took these photos before we baked them, though. So yours might not look the same when they come out of the oven. You can see in the prep photo below what they look like in the casserole dish fresh from the oven.

These Sweet Potato Black Bean Enchiladas pair well with a little shredded lettuce salad on the side, along with some Corn Tortilla Corn Chips  and some of my Grandpa’s Dipping Hot Sauce. We used grandpa’s hot sauce in our enchiladas, too. If you plan to do the same, be sure to make it ahead of time.

Vegan Sloppy Joes

Vegan Sloppy Joes PinThese Vegan Sloppy Joes are loaded with 16g protein thanks to the lentils, and they taste just like the Sloppy Joes I had as a kid. To be honest, though, I didn’t like sloppy joes as a kid. But loved them as an adult.

You could make these with Beyond Meat Beefy Crumbles. That would be delicious, but we prefer to stick to whole-foods whenever possible and the lentils are perfect for this recipe.

We ate ours the old fashioned way: on a bun. But they would taste great over pasta, Spaghetti Squash and especially over some Boiled Potatoes.

As a side dish, some Vegan French Fries and Green Beans would be very tasty!

Vegan French Fries

Vegan French Fries PinThese Vegan French Fries are made with very little oil, but they taste delicious. We use just enough oil to coat the fries and make the spices stick. This keeps the calories and fat down, but still delivers a tasty french fry.

This recipe was inspired by the french fries we ate on our trip to Ecuador. Several of the restaurants in Cuenca served french fries that were a lot different than those in the US. They were thick-cut, with a little salt and cooked in very little oil. They didn’t have that greasy texture and flavor of American french fries. We absolutely loved them!

You can easily make this a plain french fry recipe, but we like to add some additional flavor with chili powder and smoked paprika. The smoked paprika gives them a BBQ chip flavor that has always been one of my favorites. We’ve also made them with chipotle seasoning, which gives them a real kick.

They’re delicious plain, or you can dip them in some homemade ketchup or your favorite dipping condiment.

Vegan Fajitas (Oil-Free)

Vegan Fajitas PinThese Vegan Fajitas with roasted portobello mushrooms and sautéed onions and peppers is absolutely delicious, and very nutritious!

Three corn tortillas topped with all the fixin’s has 450 calories, 11 grams of fiber and 17 grams of protein. Add to that: 70% RDA of Vitamin A, 315% Vitamin C, 76% Calcium and 24% Iron. And this doesn’t include the optional avocado, brown rice or refried beans!

Looking at these stats for one vegan dish, it’s hard to understand how the protein and calcium deficiency myths gained traction and continue to be two of the most common questions vegans get asked.

We used corn tortillas in our recipe because they’re made with only corn and water. They contain no refined flour or oil. Most flour tortillas we’ve found here in Ecuador have either oil or lard, and we haven’t found any whole wheat tortillas, so we opted for the healthier non-GMO corn tortillas. If you can find oil and lard free whole wheat flour tortillas, feel free to use those instead of corn.

Vegan Fajitas

We like using my Grandpa’s Vegan Dipping Hot Sauce on our vegan fajitas, but you can use your favorite salsa. Just be sure to get a salsa without oil or a lot of added sugar, as most store-bought brands contain one or both.

The avocado, brown rice and Refried Beans are optional since this is already a filling and high calorie meal without them. However, they make great companions for these Vegan Fajitas! These are also fantastic topped with a little Vegan Cashew Sour Cream!

Roasted Squash Seeds

Roasted Squash Seeds PinThis Roasted Squash Seeds recipe is a great use for your pumpkin, acorn, butternut and other squash seeds. We used to throw them out! Now we enjoy them as a healthy snack!

Pumpkin seeds are the best because the seeds are larger and there’s more of them in a regular sized pumpkin. However, you can roast seeds from any type of squash.

Most recipes call for oil, but you don’t need oil to roast these. Just stir in your favorite seasonings while the seeds are still damp and bake them on a Silpat or baking sheet until they’re crunchy.

This is a simple recipe using only garlic salt and chili powder. But we also like them with garlic powder instead of garlic salt, onion powder, turmeric and cayenne pepper. They would be great with chipotle seasoning if you have it.

Easy Tofu Scramble

Easy Tofu Scramble PinIf you’re in a hurry or if you need an Easy Tofu Scramble for your Vegan Sardou, this is the perfect recipe. It only takes a couple of minutes to prepare once you’ve pressed the tofu and it’s a great substitute for any scrambled egg recipe.

Contrary to what the dairy industry will have you believe, tofu and soy are very healthy foods. They’ve been consumed in asian countries for millennia and are strongly associated with positive health outcomes.

Most of the negative publicity soy gets was created by the dairy industry to protect their profits from soy milk. All of those myths have since been proven false, but that doesn’t keep them from being perpetuated.

My favorite myth is that the estrogen (actually phytoestrogen) found in soy will cause gynecomastia (aka man-boobs or moobs). In psychology, this is called projection, which occurs when “humans defend themselves against their own unconscious impulses or qualities (both positive and negative) by denying their existence in themselves while attributing them to others.”

Phytoestrogen is different than mammal estrogen. Phytoestrogens have been shown to help prevent or reduce diabetes, several forms of cancer, blood cholesterol and cardiovascular disease.

Plant estrogen doesn’t behave the same way as mammal estrogen, but you know what has loads of mammal estrogen? Cow’s milk. Unlike phytoestrogens, cow estrogen found in dairy looks just like human estrogen, which may actually cause moobs, as well as male infertility, several forms of cancer, osteoporosis, erectile disfunction, and heart disease. Dairy also exposes us to toxic chemicals that make their way up the food chain and get stored in the fat in milk.

When the dairy industry started the myth that phytoestrogens cause moobs, they were actually projecting the real negative qualities of dairy onto a naturally healthy food, soy. But when a competitor like soy milk threatens your bottom line, you do whatever it takes to protect the interests of your investors even if that means funding false or misleading studies, as well as organizations that promote them.

Our regular Tofu Scramble recipe has a higher nutritional content because it’s loaded with mushrooms, hearty greens and colorful bell peppers. If you have the time and ingredients, you might like that even more.

Vegan Nachos

Vegan Nachos PinThese Vegan Nachos are loaded with goodies. Vegan Refried Beans, Potato Cheese Sauce, Vegan Cashew Sour Cream, jalapeños, black olives, avocado and salsa make this one yummy party dish!

Nachos are one of those treats that most people expect to give up when they go vegan, but there’s no need to make such a supreme sacrifice. The potato cheese sauce tastes better than the nasty cheese you find on most non-vegan nachos, and the cashew sour cream is absolutely delicious!

We used the toppings that we like the most, but you can be as creative as you want to be. These vegan nachos would be great with some sautéed onions or mushrooms, seasoned tofu, Tex-Mex jackfruit, vegan chorizo or anything else you can think of.

We bought some yellow and blue corn chips for this recipe, but you can easily make this with some Corn Tortilla Corn Chips.

Just promise me you’ll serve these at your next gathering of non-vegan friends so they can see how good veganized food can taste!

Vegan Black Bean Burgers

Vegan Black Bean Burgers PinThese Vegan Black Bean Burgers are quick and easy to make, but it’s also filling and delicious. Tastes great on a whole grain bun with Swiss chard, a slice of tomato and spicy mustard.

The texture and consistency of the patties is a lot like ground beef. We baked them in the oven, but you could easily throw them on the grill to get some of that extra smoky flavor or fry them in a skillet if you’re not concerned with keeping them oil free.

You can make up a batch of these and keep them in the refrigerator for several days. Since they’re not made of meat, they won’t spoil or stink up your fridge. You can even individually freeze them and pull out one or two at a time.

Vegan Huevos Rancheros

Vegan Huevos Rancheros PinThis delicious and easy Vegan Huevos Rancheros recipe will have you looking forward to breakfast. It’s loaded with protein and healthy carbs, but it’s oil free and gluten free.

You can use regular refried beans or mash up some pinto beans, but we prefer the refried black beans for a little extra flavor. Use organic corn tortillas instead of flour to keep it gluten free, but also because organic corn has more fiber than flour.

If you’re concerned about the carbs, you can use one tortilla instead of two, but it won’t have as much fiber and won’t be as filling. That means you’ll probably be hungry sooner and feel the need to snack.

Vegan Chili

Soy Free Vegan ChiliA hot bowl of vegan chili on a cold day is the best way to warm your bones. This vegan chili is a traditional tomato chili with “meat” and beans. The taste and texture of the Beyond Meat Beefy Crumbles is just like ground beef, so you won’t be able to tell any difference.

We used fire-roasted chopped tomatoes for a little extra flavor in our vegan chili. However, you can use regular chopped tomatoes or you can even cut up some fresh tomatoes.

If you’re in a hurry, you can buy a chili seasoning packet, but making your own chili tastes so much better.

It’s a challenge finding vegan crackers, but if you can locate some, they’ll go well crumbled up in the bowl.
