We love this Easy Polenta recipe because it’s so delicious, low calorie and versatile. We prefer to eat it warm, but you can eat it cold straight out of the fridge if you’re in a hurry.
It’s super low calorie, with only 34 calories per serving. That means you can eat two or three pieces and not feel guilty about it. Sometimes, I eat one serving as a side dish and another serving as dessert topped with Chia Seed Jam.
It’s so versatile that it goes with just about anything! You can eat it for breakfast with some Chia Seed Jam or your favorite fruit preserves. You can eat for lunch topped with a little leftover marinara or salsa. You can eat it for dinner topped with a little paprika as a simple low calorie side dish with your Vegan Lentil Loaf or Vegan Portobello Mushroom Steaks. The possibilities are endless!
It sets up nice and firm after it’s been in the refrigerator for about 15 minutes. It’s not soft like grits, porridge or Malt-o-Meal. You can pick up a square and eat it without a utensil.
