Carrot Dogs
You won’t believe how much these vegan carrot dogs taste like real hotdogs. I was skeptical, too. But they really do taste like hotdogs, only nutritious.

Let’s Cook the Carrots
  1. Fill a large flat skillet or pan with water and bring to a boil.
  2. Cut the carrots to bun length.
  3. Reduce the water to a simmer and add the carrots. Cook for 10 minutes or until the carrots are fork tender but still firm. Cook the spare carrot parts, too, or eat them raw.
Let’s Prepare the Marinade
  1. Prepare the marinade by adding apple cider vinegar, water, sesame oil, tamari, garlic powder, liquid smoke, black pepper and salt to a sealable container large enough to fit 4 carrots. You can also use a ziplock bag.
  2. Add the carrots to the marinade and shake to coat. Let them soak for 4 hours or overnight if you like a stronger flavor.
Let’s Cook the Carrot Dogs
  1. Preheat the oven to 400 degrees.
  2. Place the carrot dogs on a baking sheet spaced apart.
  3. Cook the carrot dogs for 10 minutes or until they are sizzling. You can also put the carrots in a bun, wrap with a paper towel and microwave for 30 seconds. That’s how I used to cook hotdogs when I was a kid, and it works for these carrot dogs as well.
  4. Put the carrots on a hotdog bun and add with your favorite hotdog toppings like ketchup, mustard, relish, chili, onions, jalapeƱos, etc.
