Chunky Tomato Sauce w/ Vegetables over Pasta
This Chunky Tomato Sauce w/ Vegetables was an Amelia special. She threw a bunch of vegetables we had on-hand in a skillet and sautéed them with a little vegetable broth. Then we served them over some whole grain pasta. Delicious and easy!

Instructions
  1. Heat broth in a large skillet. Add onions and garlic and sauté over medium heat until the onions are translucent, 3-4 minutes.
  2. Add in drained tomatoes, zucchini, oregano, fennel, salt, black and red pepper and steam fry, covered, for another 4-5 minutes.
  3. Stir in arugula, basil, and lemon juice and cook until greens are wilted, about another 3 minutes.
  4. Serve over your favorite pasta and top with fresh basil.
