Ingredients

lentils
rinsed and sorted for debris

tomato paste

kale
shredded, or your favorite green

coconut milk

Instructions
Heat 1/4 cup veggie broth over medium heat in a large soup pot. Add the onion, garlic and carrots and sauté until onions are translucent, about 3-4 minutes.
Add the chopped potatoes and spices and cook for 1 minute.
Add the remaining vegetable broth or water, lentils and tomato paste. Simmer until lentils are tender, about 30 minutes.
Add the greens and coconut milk and continue to cook until the greens are wilted, about 5 minutes.
Serve plain or over brown rice. This makes a thick, creamy soup. Add water for a thinner consistency.
