Easy Vegan Artichokes
This Oil-Free Easy Vegan Artichokes recipe is super simple and absolutely delicious. It takes about 5 minutes to prepare the artichokes and another 20 to 30 minutes to steam them so they’re a great snack or appetizer to show off to your dinner guests.

  1. Wash the artichokes.
  2. Cut about 1/4 inch off the top and bottom of the artichokes.
  3. Cut the artichokes in half and scoop out the hairy, fibrous material in the middle. Use a small knife to make an incision at the base of the fibers, then scoop them out with a spoon.
  4. Place them on a steamer tray inside a large pot. Fill the pot with enough water to almost touch the bottom of the steamer tray. Cover and bring the water to a boil. Let simmer for 20 to 30 minutes or until the soft part of the artichokes just above the stem is fork tender. You may need to add more water during cooking so check it every 10 minutes.
  5. Serve with a lemon cut into quarters. Squeeze the lemon over the artichoke and enjoy as a delicious side dish, snack or appetizer.
