Fruit Squares
These Fruit Squares make a delicious dessert, especially when served with non-dairy ice cream. No one will know they’re vegan.

Ingredient Prep
  1. Preheat oven to 350 degrees.
  2. In a medium bowl, mix 1/2 cup of flour with the oats, brown sugar, cinnamon, baking soda and 1/2 cup of vegan butter. Mix until well combined and put it in the refrigerator.
  3. In another medium bowl, mix the water and corn starch until cornstarch is dissolved.
Let’s Cook
  1. Add the cornstarch mixture, blueberries, raspberries, sugar and lemon juice to a small saucepan and heat over medium heat.
  2. Cook the berry mixture for 5 to 7 minutes stirring frequently until the mixture starts to form a thick sauce. Remove from heat and let cool.
  3. In a small bowl, mix the remaining 2 cups of flour, the remaining 1/2 cup of vegan butter and the salt until it forms a crumble.
  4. Add cold water by the tbsp and stir until the mixture forms a dough. You can add flour if it’s too wet or more water if it’s too dry.
  5. Line a 9×13 inch pan with parchment paper and press the dough into the pan until it’s flat.
  6. Pour the berry mixture over the dough and spread evenly.
  7. Crumble the chilled oat mixture over the berries to evenly cover.
  8. Bake for 20 to 30 minutes until the oats start to brown.
  9. Let cool to room temperature, then slice and serve or store in the refrigerator.
