  1. Cut the grape tomatoes in half and slice the mushrooms. Snap the stems off the green beans if needed.
Let’s Cook
  1. Add the vegetable broth to a small skillet over medium heat.
  2. Add the minced garlic to the heated vegetable broth. Simmer covered for 1 minute.
  3. Add the green beans and cook for 2 minutes. Add more vegetable broth if needed.
  4. Add the tomatoes, mushrooms, oregano and salt. Stir to mix well.
  5. Simmer and stir occasionally until everything is warm and a little soft. About 3 to 5 minutes.
  6. Makes a great side dish for any meal, but especially Italian dishes.

Serving size is about 3/4 cup.

We had some leftover roasted green beans that we tossed in with the tomatoes and mushrooms, but you could also use zucchini, yellow squash, asparagus or another one of your favorite veggies. Be creative. Your taste-buds will thank you.
