Preheat oven to 400 degrees.
Wash and shred or chop one bunch of kale into potato chip size pieces and place in a large mixing bowl.
Add the olive oil and vinegar to the kale and mix to coat evenly.
Lightly spray a baking sheet with non-stick cooking spray.
Put the kale on the baking sheet and spread evenly.
Evenly sprinkle the salt over the kale chips. A salt grinder works well for this.
Bake for 12 to 15 minutes or until the kale is dry and crispy. The kale will reduce in size considerably.
Let cool and serve.
Serving size is about 1 cup of cooked kale chips.
