Instructions
  1. Assemble the ingredients and chop the veggies to be sautéed.
  2. Cook lentils per package directions until tender, about 30 minutes. You can do this ahead of time for convenience.
  3. Heat 1/4 cup veggie broth in a large skillet. Add the onions, carrots and celery. Steam fry until the veggies are tender, about 5 minutes.
  4. Assemble the sauce ingredients.
  5. Add tomato sauce, milk, and spices and stir to combine.
  6. Add the lentils and simmer over low heat until the sauce is bubbly and the flavors are well blended, approximately 20 minutes.
  7. Cook the pasta according to the package instructions.
  8. Serve over your favorite pasta.
