  1. Cut the stems off the serrano peppers.
  2. Add the peppers, garlic cloves and salt to a food processor and blend well.
  3. Place the mixture in a large jar and cover with a cheesecloth or thin towel. Let sit to ferment for 2 days.

  1. Drain the diced tomatoes.
  2. Pour the pepper mixture into a blender and add the Step 2 Ingredients. Blend until smooth. Don’t over blend.
  3. Transfer to glass jars or sealable containers and refrigerate for at least 2 hours before serving. It’s better to sit overnight.
