Tahini Sauce
  1. Assemble the Tahini Sauce ingredients.
  2. Add all the Tahini Sauce ingredients to a small bowl and stir to blend into a paste.
Tofu Stir Fry
  1. Cook the brown rice according to the package instructions. 1 cup dry yields about 3 cups cooked.
  2. Assemble your ingredients and chop your veggies.
  3. Heat the veggie broth in a large skillet over medium heat. Add the garlic and onion, cover and steam fry until tender, 2-3 minutes.
  4. Add tofu, remaining veggies, basil, garlic powder, salt and the tahini paste to the skillet.
  5. Stir to combine and steam fry, stirring frequently, until veggies are crisp tender, approximately 10 minutes. You may need to add an extra tablespoon or 2 of broth to thin the paste into a thick sauce. Continue to add broth to achieve desired consistency of the sauce.
  6. Stir in lemon juice.
  7. Serve with brown rice.
