This Vegan Baked Potato recipe is both delicious and filling. Use the baked potato as the base and garnish it with any of your favorite vegan toppings.

  1. Preheat your oven to 400 degrees.
  2. Wash the potatoes and stab them with a fork several times to create air holes so they don’t explode in your oven.
  3. Bake on a baking sheet unwrapped for 45 minutes or until they’re soft.
  4. Remove from oven, cut in half and top with 2 tbsp yogurt, 1/2 tsp hot sauce and salt and pepper to taste.
