BLT w/ Avocado
This Vegan BLT with Avocado means you can still enjoy your bacon, lettuce and tomato sandwich on a hot summer day. Goes great with Vegan French Fries.

Instructions
  1. Prepare the Cashew Cream and Tofu Bacon ahead of time, allowing a few hours for the cashews to soak and the tofu bacon to marinate.
  2. Toast bread if desired.
  3. Spread 1/2 tbsp of cashew cream on each slice of bread.
  4. Slice tomato and avocado.
  5. For each sandwich, layer 4 slices of Tofu Bacon, 1 slice of tomato, 1/4 cup spinach and 1/2 avocado.
