Creamed Spinach
This Vegan Creamed Spinach is easy to prepare and absolutely delicious. A great side-dish on its own or a tasty base for your Vegan Sardou.

Ingredients
Instructions
  1. Chop shallot.
  2. Heat veggie broth in a large saucepan.
  3. Add shallots and cook over medium heat. Make sure to cover the pan so the broth does not evaporate. Stir the shallots occasionally and cook for 2-3 minutes until soft.
  4. Add flour and stir to warm, approximately 1 minute.
  5. Add almond milk, salt, pepper, nutmeg and nutritional yeast and stir to combine.
  6. Cook on medium heat until sauces thickens, about 2-3 minutes.
  7. Wash and chop spinach (or use baby spinach).
  8. Add spinach to pan and stir to coat leaves with sauce.
  9. Reduce heat to low and cook until spinach is wilted, about 3-4 minutes.
  10. Enjoy on its own as a side-dish.
  11. Or as a base for your Vegan Sardou.
