Cake Ingredient Prep
  1. Preheat oven to 350 degrees.
  2. Stir together flour, cocoa powder, baking powder, baking soda and salt. Set aside.
  3. In a large mixing bowl, stir together almond (or coconut) milk, water and vinegar until curdled. Add sugar, brown sugar, oil and vanilla extract.
  4. Slowly whisk in flour mixture until combined.
  5. Stir in 1 cup of mini vegan chocolate chips.
  6. Spray a bundt cake pan with non-stick cooking spray.
  7. Pour cake batter into the bundt cake pan.
Let’s Bake
  1. Bake for 40 to 45 minutes or until a toothpick inserted into the cake comes out clean.
  2. Cook cake in pan for 15 minutes, then invert cake onto a cooling rack and cool completely.
Ganache Ingredient Prep
  1. Add 1 cup semi-sweet vegan chocolate chips and 4 tbsp of almond or coconut milk to a microwave safe bowl and microwave for 30 seconds. Stir and microwave an additional 15 seconds. You can also heat it on the stove.
  2. Whisk in the powder sugar and vanilla.
  3. Add an additional 1 to 2 tbsp of almond milk if needed to get the right consistency.
  4. Pour over cooled cake, letting it run down the sides of the cake.
  5. Top with fresh strawberries or chocolate sprinkles if desired or enjoy it as-is.
