Ingredients

cup
dry lentils
your favorite color, rinsed
2 1/2
cups
water
2
tbsp
vegetable broth
1/2
cup
shallots
diced
1/2
cup
carrots
diced
1
tsp
black pepper
1 1/2
tbsp
soy sauce
3/4
cup
rolled oats
finely ground
3/4
cup
breadcrumbs

thin sandwich buns
or hamburger buns

tomato

Instructions
Thoroughly rinse the lentils.
Boil lentils in the water for 20 minutes until they’re soft and most of the water is gone.
Preheat oven to 400 degrees after the lentils have finished cooking.
Finely chop the shallots and carrots. We used a food processor.
Saute the shallots and carrots in the oil until soft. About 5 minutes.
In a mixing bowl, combine the cooked ingredients with the black pepper, soy sauce, oats and bread crumbs.
Form the mixture into 6 patties and place on a baking sheet coated with non-stick cooking spray or parchment paper
Bake at 400 degrees for 15 minutes.
Serve with sliced tomatoes, lettuce and your favorite condiment.
