Potato Salad with Mustard Greens
This is a delicious vegan potato salad that pairs well with veggie burgers, Portobello mushroom steaks or any other meal that calls for potato salad.

  1. Boil potatoes in salted water for 30 minutes or until tender.
  2. Drain the potatoes and let cool.
  3. While the potatoes cool combine the vegan mayonnaise, white wine vinegar and hot sauce. Whisk to combine ingredients thoroughly, making a dressing.
  4. Chopped cooled potatoes and add to a large bowl.
  5. Add the combined ingredients, the dressing and stir to coat the potatoes.
  6. Add the mustard greens and stir gently to evenly distribute.
  7. Season to taste with salt and pepper.
