Delicious vegan snickerdoodles are soft sugar cookies coated with cinnamon. They’re perfect for the holiday season, work parties or for your own pleasure.

Ingredient Prep
  1. Measure 1 cup of vegan butter and set it aside for 30 minutes before preparing the dough to soften it up.
  2. Make the flax egg according to the recipe instructions and let it sit for at least 10 minutes prior to making the cookie dough.
Let’s Make the Dough
  1. Add the butter, sugar and brown sugar to a mixing bowl. Use a beater or mixer to cream the ingredients together.
  2. Add the flax egg and vanilla extract and blend until combined.
  3. Stir in the flour, baking powder, baking soda and salt.
  4. In a small bowl, make the cinnamon sugar mixture by stirring together the 1/4 cup sugar and 1 tbsp of cinnamon.
Let’s Bake the Cookies
  1. Roll the dough into 1-inch balls, then roll in the cinnamon sugar mixture, coating evenly. Place the cinnamon sugar coated dough balls on a cookie sheet, evenly spaced.
  2. Bake for 11 minutes or until cookies are puffy and edges are just barely golden brown.
  3. Remove the cookie sheet from the oven and let it cool on a wire rack for 1 to 2 minutes. Then place the cookies on the wire rack allowing them to cool.
  4. Store in an airtight container once they’ve cooled but before they harden.
