Let’s Cook the Sweet Potatoes
  1. Preheat oven to 425 degrees.
  2. Wash, peel and slice the sweet potatoes into 1 inch thick slices.
  3. Spread the sweet potato slices on a parchment lined baking sheet. Not touching.
  4. Drizzle the vegetable broth over the sweet potatoes.
  5. Sprinkle the salt and brown sugar over the sweet potatoes.
  6. Bake for 20 minutes.
  7. Using tongs, flip the slices over and bake for another 20 minutes or until the potatoes are lightly browned and soft in the middle.
Let’s Cook the Maple Pecan Glaze
  1. Chop the pecans into small pieces.
  2. Spread pecans on a baking sheet.
  3. When the sweet potatoes have about 15 minutes left, put the baking sheet in the oven on the bottom rack and roast for 5 to 8 minutes until toasted.
  4. Add the maple syrup to a small saucepan.
  5. When the pecans are about ready, bring the maple syrup to a boil.
  6. Add the pecans to the maple syrup and boil for 1 minute. Remove from heat.
  7. To serve, dish the sweet potatoes onto a plate and drizzle with the maple pecan glaze.
