Roasted Broccoli with Garlic and Lemon Juice

I’m a big fan of broccoli. I like it raw, steamed, in soup…you name it. But this Roasted Broccoli with Garlic and Lemon Juice recipe is by far my favorite. I could sit on the sofa and eat those little crispy florets like potato chips!

We tried cutting out the oil and just using vegetable broth, but they didn’t taste nearly as good. Plus, they didn’t have the crispiness that we like, so we decided to leave the oil. Each serving still only has 128 calories. Using aquafaba may work in place of oil, but we haven’t tried that yet. Let us know if you do!

Ingredient Prep
  1. Preheat oven to 400 degrees.
  2. Wash and cut the broccoli into florets.
  3. In a large mixing bowl, add the vegetable broth, olive oil, salt, lemon juice and minced garlic. Stir to combine and taste it to make sure you like it. You may want to add more salt or lemon juice.
  4. Add the broccoli to the mixing bowl with the liquid ingredients and toss to evenly coat the broccoli.
Let's Cook
  1. Spread the broccoli evenly over a baking sheet coated with non-stick cooking spray.
  2. Bake for 40 minutes or until it's your preferred level of crispiness.
