Potato Cheese Sauce

This Potato Cheese Sauce tastes far better than the typical “cheese” like product found a mile from the refrigerated section in the grocery story. You know the stuff I’m talking about…in yellow boxes stacked on the store shelf…the only thing that’ll outlive Twinkies and cockroaches when the world ends.

Believe it or not, those “cheese” products are made with milk and whey (the leftover scraps from the cheese making process). How they can store it outside the refrigerator is a testament to the copious amounts of preservatives they contain. They also contain a lot of fat and cholesterol.

Lucky for you, this Potato Cheese Sauce recipe has an even better taste and it’s FAR more nutritious. There are no preservatives, cholesterol, fat or any of the other nasty ingredients found in the processed “cheese.” Add to that, this recipe contains only 39 calories for a quarter cup while the other stuff has 180 calories!

Vegan Cashew Sour Cream

Vegan Cashew Sour Cream PinYou can use this Vegan Cashew Sour Cream as a substitute for regular sour cream. It has the same creamy texture and sour flavor so you won’t notice much difference.

We love this Vegan Cashew Sour Cream and use it for lots of recipes as a substitute for regular sour cream. We also like it on our baked potatoes with a little salt and pepper. With this healthy nut-based sour cream, there’s no need for the harmful, saturated fat, cholesterol and hormone laden dairy variety.

This recipe is super simple. Just soak the cashews in water for 2 to 4 hours (or overnight), throw them in a blender with the other ingredients and blend until smooth.

Unlike Vegan Cashew Cream and Cashew Cream Cheese, you want to blend this until completely smooth to mimic dairy-based sour cream. Add a little extra water if it still has lumps and keep blending until all the lumps are gone.

Flax Eggs

Flax EggsFlax eggs are a really good substitute for chicken eggs because they have a similar consistency and serve the same purpose without the fat, cholesterol or animal cruelty. Plus, one flax egg has 2 grams of fiber and 30 calories compared to zero grams of fiber and 78 calories for a real egg.

Cashew Cream Cheese

Cashew Cream CheeseCashew Cream Cheese is a staple substitute in the vegan diet and it’s easy to make. By mixing in 1 tbsp of apple cider vinegar, you can closely approximate a cheese flavor. You can also mix in some nutritional yeast, which adds the cheese flavor to go with the texture.

Use this Cashew Cream Cheese in your cooking to replace ricotta or cream cheese. For ricotta, leave it a little chunkier. For cream cheese, blend it until it’s smooth and add a little extra water to thin it out. It’s also great as a sandwich spread and as a dip for your chips and veggies.

You’ll need to soak the cashews for 2 hours to make them soft. Plan accordingly!

Cashew Cream CheeseVegan Cashew Cream is a staple substitute in the plant based vegan diet and it’s easy to make. You can use it in place of ricotta, cream and other types of melted cheese since it has a similar texture.

Depending on how you want to use this vegan cashew cream, you’ll want to blend it differently. For a ricotta texture, blend it until its creamy but slightly lumpy. If you want to drizzle it over pizza or pastries, add a little extra water to the blender and blend until it’s a smooth creamy liquid that pours easily.

You’ll need to soak the cashews for 2 hours to make them soft. Plan accordingly.
