I’ve never been an egg salad fan so I was very skeptical of this recipe, but Amelia out-did herself on this one. It looks, feels and tastes just like egg salad, but with less of the overpowering mayo flavor.

Turmeric is what gives the mashed tofu it’s yellow, egg-like color, but turmeric is also very medically beneficial on its own right. We had a loaf of sourdough bread on hand, but you can use your favorite bread, preferably whole grain.

  1. Drain the tofu, wrap in a paper towel or cheesecloth and press under a heavy skillet to squeeze the water out. About 10 to 15 minutes depending on the moisture content.
  2. Dice the green onions.
Let's Cook
  1. Put the tofu in a large bowl and crumble with a fork. It should look like this, only in a bowl so you can mix in the other ingredients.

  2. Add the remaining ingredients to the bowl with the tofu and mix well. The tofu should take on a yellow hue from the turmeric and have an egg-like consistency.
  3. Serve with lettuce between 2 slices of your favorite bread.
