Everyone could use a little more cabbage in their diets and this recipe is a delicious delivery system for it.

To boost up the calories and make it a little heartier, try adding 3 or 4 diced potatoes when you add the cabbage. This soup will also go well with a nice Side Salad or a Vegan Baked Potato.

Instructions
  1. Heat 3 tbsp veggie broth in a large pot.
  2. Add garlic and chopped onion. Sauté covered until soft, about 2-3 minutes.
  3. Add chopped carrots and cook covered for another 5 minutes.
  4. Stir in the 8 cups veggies broth.
  5. Add the cabbage, white beans, tomatoes, kale, salt, pepper, rosemary, thyme, paprika and red pepper. Stir to combine.
  6. Simmer until veggies are tender, about 90 minutes.
