Spinach is loaded with iron and other healthy nutrients, but it can get tiresome eating it raw all the time. This is a nice alternative that’ll help you add more greens to your daily routine.

This recipe makes about 2 servings and doesn’t reheat well so you’ll want to finish it in one sitting. If you’re cooking for one, just cut the ingredients in half or double them if you’re cooking for four.

Ingredients

Instructions
  1. Chop shallot.
  2. Heat veggie broth in a large saucepan.
  3. Add shallots and cook over medium heat. Make sure to cover the pan so the broth does not evaporate. Stir the shallots occasionally and cook for 2-3 minutes until soft.
  4. Add flour and stir to warm, approximately 1 minute.
  5. Add almond milk, salt, pepper, nutmeg and nutritional yeast and stir to combine.
  6. Cook on medium heat until sauces thickens, about 2-3 minutes.
  7. Wash and chop spinach (or use baby spinach).
  8. Add spinach to pan and stir to coat leaves with sauce.
  9. Reduce heat to low and cook until spinach is wilted, about 3-4 minutes.
  10. Enjoy on its own as a side-dish.
