Vegan Mac and CheeseWe’ve tried several Vegan Mac and Cheese recipes before finding this one. It’s absolutely delicious, but it doesn’t taste quite like non-vegan mac n cheese.

It’s just as creamy and very flavorful, but it lacks the “cheesiness” of regular mac n cheese so adjust your expectations accordingly. If you judge it on its own merits, you may like it better.

We used gluten free Ancient Harvest Quinoa Organic Elbow Pasta and cornstarch, which also makes this a Gluten Free Mac and Cheese recipe.

We used vegetable broth to sauté the garlic instead of olive oil, so the only oil is 1 tsp drizzled over the roasted garlic. You may be able to use vegetable broth for that, too. That would make this recipe a Vegan Gluten Free, Oil Free & Soy Free Mac and Cheese!

Instructions
Let's Roast the Garlic
  1. Preheat oven to 400 degrees.
  2. Cut off the top of a head of garlic and drizzle the top with 1 tsp olive oil. Sprinkle with 1/8 tsp salt and loosely wrap in foil.
  3. Place directly on oven rack and roast for 45 minutes - 1 hour, depending on size of garlic. You'll know it's done when the garlic is very fragrant and the bulb is golden brown.
  4. Remove from oven, slightly unwrap and let it cool.
Let's Cook the Vegan Mac and Cheese
  1. At the 30-minute mark of the roasted garlic, bring water to a boil and prepare the pasta according to the package instructions.
  2. In a medium sauce pan over medium heat, add the vegetable broth.
  3. Once hot, add the minced garlic and sauté 1 to 2 minutes or until browned.
  4. Add corn starch and whisk, cooking for 1 minute.
  5. Slowly add almond milk while whisking, then cook for 2 minutes over medium heat, stirring frequently. The sauce may look a little clumpy.
  6. Remove the garlic from the peel by squeezing the base. The softened cloves will pop right out.
  7. Transfer the sauce to a blender along with the roasted garlic.
  8. Add salt, black pepper, nutritional yeast and vegan parmesan cheese to the blender. Blend on high until creamy and smooth, scraping down sides as needed.
  9. Taste and adjust seasonings to your preferences.
  10. Return sauce back to sauce pan and cook over low heat until warmed and slightly thickened. About 2-3 minutes. Whisk occasionally.
  11. As it warms, it will thicken and get creamy. To thin slightly, add almond milk 1 tbsp at a time until desired consistency. Turn off heat if it starts bubbling too aggressively.

  12. Add cooked, drained pasta to the sauce and toss to coat.

  13. Enjoy topped with a sprinkle of paprika or some extra vegan parmesan cheese if desired. Keep leftovers for up to 3 days.
