Vegan Sweet Potatoes with Maple Pecan Glaze
These are a fast and delicious alternative to the more labor intensive mashed sweet potatoes that often appear on holiday menus. This vegan sweet potatoes with maple pecan glaze recipe only takes about 10 minutes to prepare and they taste amazing!
Sweet potatoes may be a super food, but each serving of this decadent recipe packs more than 260 calories. It’s certainly not an everyday side dish, especially if you’re trying to lose weight, but it’s great for a special holiday treat or if you just need a little comfort food.

This recipe for vegan sweet potatoes with maple pecan glaze is the perfect side dish for your holiday meals. It's dessert-like and delicious.

- 2 lbs sweet potatoes peeled
- 5 tbsp vegetable broth
- 1/2 tsp salt
- 1/4 cup brown sugar
- 1/2 cup maple syrup
- 1/2 cup pecans roasted, chopped
- Preheat oven to 425 degrees.
- Wash, peel and slice the sweet potatoes into 1 inch thick slices.
- Spread the sweet potato slices on a parchment lined baking sheet. Not touching.
- Drizzle the vegetable broth over the sweet potatoes.
- Sprinkle the salt and brown sugar over the sweet potatoes.
- Bake for 20 minutes.
- Using tongs, flip the slices over and bake for another 20 minutes or until the potatoes are lightly browned and soft in the middle.
- Chop the pecans into small pieces.
- Spread pecans on a baking sheet.
- When the sweet potatoes have about 15 minutes left, put the baking sheet in the oven on the bottom rack and roast for 5 to 8 minutes until toasted.
- Add the maple syrup to a small saucepan.
- When the pecans are about ready, bring the maple syrup to a boil.
- Add the pecans to the maple syrup and boil for 1 minute. Remove from heat.
Serving size is about 1 cup.
