Instructions
  1. Heat 1/2 cup vegetable broth in a large pot over medium heat.
  2. Sauté onion and garlic in pot until soft. About 10 to 15 minutes. Add more broth if needed.
  3. Add tomatoes and salt. Simmer about 10 minutes.
  4. Add the beans and remaining vegetable broth. Simmer another 10 minutes.
  5. Add the basil, lemon juice and pepper. Stir to combine and serve.

    What size can for tomatoes and beans? I need to GAIN weight so will add cup of pasta, olive oil and perhaps carrots.
